Description

Les composés phénoliques (CP) constituants importants des végétaux sont l’arme de défense du règne végétal lequel constitue le réservoir de molécules guérisseuses d’un grand nombre de maladies connues. Notre intérêt se focalise sur la valorisation des coproduits des industries agroalimentaires qui sont très riches en CP. Grâce à leur structure chimique, ces molécules se caractérisent par une puissante activité antioxydante et démontrent des propriétés anticancéreuses, antimicrobiennes, contre les maladies cardiovasculaires et contre le vieillissement des organes. Le but de notre travail est dans un premier temps d’optimiser les procédés d’extractions de ces molécules par des techniques d’extraction innovantes et dans un deuxième temps d’effectuer des analyses fonctionnelles sur les CP extraits. L’effet de la poudre obtenue et enrichie en CP est de même étudié sur le microbiote. A signaler que les CP ainsi caractérisés pourraient être utilisés comme additifs dans les industries alimentaires, cosmétiques, nutarceutiques ou d’autres.

Descriptif et Objectif

Les principales activités de recherche dans cette thématique portent sur :

  1. L’étude des levures du genre Brettanomyces dans l’industrie du vin. La contamination du vin par cette levure conduit à un problème œnologique d’actualité, celui de la production de phénols volatils ce qui génère des arômes indésirables, rappelant l’écurie, la sueur de cheval et l’urine de souris.
    Les moyens de lutte à disposition des vitivinicultures ne sont pas encore bien maîtrisés. Ainsi, le développement de cette levure dans un contexte œnologique peut avoir des conséquences économiques non négligeables sachant que les contaminations sont fréquentes et aléatoires.
    L’étude des cinétiques de biosorption des molécules de 4-éthylphénols et de leur précurseur l’acide p-coumarique dans des conditions œnologiques sur des levures Brettanomyces bruxellensis et Saccharomyces cerevisiae.
  2. L’extraction et la caractérisation des actifs d’origines végétales libanaises et sénégalaises afin de déterminer leurs effets moléculaires sur la peau, en particulier leur activité blanchissante (taches d’hyperpigmentation) et/ou protectrice et les conséquences sur l’état moléculaire des composantes de la barrière cutanée.

Description

Cette thématique concerne des activités de recherche en optique/photonique et leurs applications dans divers domaines (médical, alimentaire et environnemental). Deux projets expérimentaux sont développés:

    • L’imagerie optique non invasive des milieux diffusants par analyse du champ de speckle polarisé.
    • La microscopie holographique digitale appliquée à l’étude et l’imagerie en 3D des structures biologiques.

Une composante importante de simulation et de modélisation numérique appuie les travaux expérimentaux. 
Les applications peuvent aller des mesures de viscosité par méthode optique, au suivi de la maturité des fruits, le diagnostic précoce de l’érosion dentaire ou même le suivi de la cinétique de durcissement des matériaux de restauration dentaire.

Par ailleurs, des activités de recherche en physique atomique, notamment en spectroscopie atomique et pompage optique de l’hélium, sont menées en étroite collaboration avec le laboratoire Kastler Brossel.

Description

Cette thématique a pour but d’étudier le phénomène d’Intensification de la Vaporisation par Détente rapide vers le Vide (IVDV). Cette intensification induit une nette accélération des opérations de transfert (chaleur, matière et quantité de mouvement) ayant lieu au sein des produits traités. Il s'agit d'un traitement "haute température-courte durée HTST" capable d'intervenir dans de nombreux procédés industriels comme le séchage, la texturation, l’extraction, la destruction des microorganismes, etc.
Le traitement par IVDV concerne des produits biologiques divers : agricoles, agro-alimentaires, pharmaceutiques, cosmétiques, etc. L’IVDV consiste à soumettre le produit à un traitement thermique sous une pression donnée, pour une durée allant de quelques secondes à quelques minutes. Il est à noter qu’avec l’IVDV une pression de 15 bars dans l’installation peut être obtenue en moins qu’une seconde. La pression et le chauffage sont généralement assurés par la vapeur d'eau saturante; il est toutefois possible d’utiliser d’autres sources de chaleur et de pression. La détente proprement dite est obtenue par une communication très rapide de la chambre de traitement avec un réservoir de vide de volume nettement plus important. Cette ouverture provoque une chute de la pression au niveau du produit. Un phénomène d'auto-évaporation aura lieu, engendrant éventuellement le soufflage du produit traité, l’explosion des cellules microbiennes, l’extraction du contenu cellulaire (molécules d’intérêts) et des huiles essentielles.

Descriptif et Objectif

Les mycotoxines sont des métabolites secondaires produits par les champignons filamenteux qui contaminent naturellement de nombreuses denrées d'origine végétale, notamment les céréales mais aussi les fruits, noix, amandes, grains, fourrages ainsi que des aliments composés ou manufacturés issus de ces filières destinées à l'alimentation humaine et animale. Elles peuvent également être retrouvées dans le lait, les œufs, les viandes ou les abats, si les animaux ont été exposés à une alimentation contaminée par ces molécules. Généralement, thermostables, elles ne sont pas détruites par les procédés habituels de cuisson et de stérilisation.

Notre recherche est divisée en 3 grandes parties :

  1. Réalisation des enquêtes sur l’état des lieux des aliments bruts et transformés issues de différentes filières agroalimentaires et l’analyse des niveaux de contamination de ces aliments par les différentes mycotoxines.
  2. Caractérisation taxonomique et moléculaire des champignons mycotoxinogènes dans le but de mieux comprendre la dynamique et l’écologie fongique ainsi que les voies de biosynthèse mycotoxinogène propres à chaque espèce et qui seront utiles et indispensables dans le développement de techniques analytiques précoces (à échelle moléculaire) d’identification.
  3. Développement et optimisation de techniques correctives pré et post-contamination et/ou récolte suite aux études d’inhibition de la croissance fongique et de modulation de la production des mycotoxines par application des extraits naturels de plantes et par biocompétition et/ou adsorption avec différentes espèces bactériennes.
